This crop comes from the Deri Kochoha station in the Oromia zone of Ethiopia. A traditional pulper removes the outer skin, then the coffee is fermented for 72 hours. After, the coffee is agitated to remove mucilage, rinsed, and dried on raised beds. Heirloom varieties of coffee grow throughout Ethiopia, the birthplace of coffee. Cross-pollination of the plant leads experts to believe there are between six and ten thousand varietals! This colossal number has made it impossible to genetically test and identify the beautiful coffees of the country.
