In the southern part of Peru lies the Puno region, which borders with Brazil. CECOVASA (La Central de Cooperativas Agrarias Cafetaleras de los Valles de Sandi) was established in 1970 by five different co-ops collaborating to improve their crops and widen their global presence. Today it is one of the largest small producer organizations in Peru. Members of the co-op have won awards for their product. The cherries are wet processed; fermented for 14 hours and patio dried. This is a certified organic and fair-trade offering.
