We source our decaf through Royal Coffee, who handles the logistics of lot selection and decaffeinating. Coffee production in these areas of Mexico are typically smallholders, families farming a small acreage of a variety of crops.
The coffee was selected for decaffeination from producers in the area by Royal Coffee, then water processed by Descamex’s Mountain Water Process. After selection, the green coffee is pre-soaked in water to expand the beans for caffeine extraction. The beans are then introduced to a solution concentrated with coffee solubles that extract the caffeine without extracting the coffee’s particular flavors.
