Noeli Edir Soares de Paula of the region Montanhas do Espirito Santo, was born and raised within the community of Rancho Dantas. Noeli learned to care for the coffee trees and to love his work from his father, and has implemented new techniques and varieties to the farm. The Montanhas do Espirito region is dominated by small-scale farmers engaged in the entire chain of the process. Mild temperatures, 73F, and steep highlands in the area help produce coffee with a round body, nice acidity, and fine sweetness. Pulped natural coffees are dried directly after de-pulping the cherries.
