Within Oaxaca lies the subregion Pluma Hidalgo, a region now almost exclusively farmed by small-holders with lots averaging 1-2 hectares. This lot was farmed by a group in the town of Santiago-Yaitepec. High altitudes and a region coffee varietal, Pluma, brings a wide range of flavor. Going back 80-100 years, the coffees grown here were blended into larger bulk with no differentiation. Over the last few years, there has been a shift; the local farmers are beginning to understand their coffee has more worth than they've been told.
